- Whiskey Hotel Barbecue's owner William Hendrickson announced yesterday, "Unfortunately, we are going to have to shut down the bar aspect of our operations, hopefully, just temporarily." For now, they will only be open in Roscoe on Sundays from 11 a.m. to 6 p.m. In Rockford, their trailer can be found from Thursday-Saturday at 1011 S. Alpine. Hendrickson says, "We opened the bar to keep our employees working during the off season for barbecue, but it’s never really taken off, and we just aren’t in a position to absorb the losses anymore." Beginning with a celebrated run in the Schnuck's parking lot in 2023, where "we sold out the first day in just two hours," Hendrickson opened a brick and mortar restaurant at 5522 Elevator Road in April 2024. But he says, "By the end of the barbecue season last year, sales at the brick and mortar were less than half of what they were at the trailer."
