Rockton American Legion hosting Thanksgiving meal

The Rockton American Legion will be hosting its 2nd annual free Thanksgiving Day meal on Thursday, November 27 from 2-7ish (or until food runs out). The bar will be open and football will be on the TV at 221 W. Main St. Rockton, IL 61072. Anyone living in Rockton, Roscoe or South Beloit who is unable to attend but would like a meal can ask one to be delivered by contacting the Legion and providing their name and address. The Rockton American Legion went through 17 turkeys to feed community members in 2024. A question on the minds of some volunteers from last year is how many will they go through this year. But how does one cook 17 turkeys in two ovens in less than half a day?
Spatchcocking. You take out the backbone and neck and flatten the breast. That method turns what can be easily a half day affair per bird into a 90 minute sprint. And that method should pay off this year, as Spencer Cushing, organizer of the 2nd annual Thanksgiving meal, knows six won't be enough.
"We have two already and are getting ten on Sunday," said Cushing at the Rockton American Legion on Monday night. "Our goal is 30."
My jaw dropped. "How are we going to cook 30 turkeys?" (Note: "we" - the author is volunteering for this Thanksgiving meal again.)

With the Legion's oven space and Cushing's careful planning, he estimates they could cook 12 turkeys at a time. Which, like last year, will be cooked in batches. So at the beginning, middle, and even at the end of the meal, there should be fresh turkey.
Mr. Cushing is excited for this year's Thanksgiving meal as it gives a chance to give back to the community. Here are a few questions that Mr. Cushing took the time to answer.
How did the Thanksgiving meal get started?
I know times are tough for many people and not having family nearby or at all was a big contributing factor in starting this. I also enjoy cooking for people and helping those in need.
How has it grown or changed for its second year?
As we enter our second year hosting the Thanksgiving Dinner, our hearts are full seeing how much support we receive. More volunteers, more donations, and seeing the impact just hits home for us. It shows the how strong and generous our community truly is.
You went through a lot of turkeys last year. How many are you planning to go through this year?
Oh man, last year we went through a total of 17 turkeys. If our predictions are correct for this year, we will probably need to go through at least 30 turkeys.
Any special shout outs to people/groups that have donated?
A HUGE thank-you to the Rockton Lions Club, especially Tami Verstraete, who jumped right in with a generous donation as soon as she heard we’d be open for Thanksgiving. I also want to recognize the members of our Legion Post for giving their time and food to make this possible. And lastly, a heartfelt thanks to everyone outside the Legion who volunteered anyway – your kindness and willingness to help truly made the difference.
Is there a story or moment from last year that really stuck with you?
We had a younger family come out last year from the Rockford area and brought their children with. When I talked to them, they said that they are kind of like the black sheep or just don’t get along with family. It still sticks with me, and I am grateful we were able to make them feel at home with a warm meal and laughter. That’s what it’s all about.
How can people support you or get involved?
We are asking for donations of any kind, but mainly turkeys, potatoes, canned corn & green beans, boxed stuffing, bread, and coffee. If you would like to donate, you can drop them off at the American Legion in Rockton at 221 W. Main St. Rockton, IL 61072.
